You could do worse than trawling through the back catalogue of releases here http://www.discogs.com/label/59-Tresor. You'd struggle to find a broader or more consistent label in my opinion. No breaks just consistent quality since the early nineties. You'll find all sorts there from detroit techno, harder looped stuff, minimalism, experimental, electro. Very strong roster. Good place to bounce off from.

Man, there is no such thing as 'important tracks and labels'.
Everyone has its own classics.
Develop your taste, listen and judge the music.

also i mentioned, kanzleramt. that label really changed my whole perspective on techno. like i said, we could really be here forever if we get into every label that had a pull on the direction of techno. so i just listed a few favs. some are probably slipping my mind at the moment. <_<
